Description
Shrimp marinades in a Bourbon, lime and honey sauce, then is cooked and served over a bed of wild rice along with some sauteed red peppers.
Ingredients

- 1 lb large shrimp, peeled and deveined
- 3 tbsp Mad River Distillers Straight Bourbon
- 2 limes
- 1 ½ tsp honey
- 3 dashes Tabasco
- ¾ tsp minced garlic
- ⅛ tsp salt & ¼ tsp salt
- ⅛ tsp cracked pepper
- 1 red pepper
- 1 cup water
- 1 tsp butter
- ¾ cup wild rice blend
Instructions
- In a bowl, whisk together the Bourbon, fresh squeezed lime juice (from 1 ½ limes, saving ½ for later), honey, tabasco, minced garlic, ⅛ tsp salt, and cracked pepper.
- Add the shrimp to the marinade, and set aside for no more than 20 minutes.
- While the shrimp is marinating, prepare the wild rice. Bring the water, butter and salt to a boil in a small pan. Once boiling, stir in the wild rice blend. Cover the pan with a lid, then reduce heat to simmer for 15 minutes. Once cooked, remove rice from the heat, then let it stand for about 5 minutes before fluffing with a fork.
- Next, cut a red pepper into strips.
- Remove shrimp from the marinade. Drizzle some oil in a pan, and sauté the shrimp until they are pink, approximately 2 minutes per side. Remove shrimp from the pan, and set them aside.
- Sauté the red pepper strips in the pan. Drizzle some of the marinade over the top and cook until they are tender and lightly charred, about 10 minutes.
- Serve the shrimp over a bed of wild rice. Add red peppers on the side. Squeeze a lime wedge over the shrimp, and enjoy!
